After training on the pruning and the precautions to be taken at the harvest, the members brought the winery with ripe, high-sugar and grapes. Thanks to the new machinery it was possible to turn it into grape juice in a timely manner and to make the wort quickly ferment. With new equipment, it was possible to avoid that the wort in fermentation warm you and in this way to conserve better the smell and the taste of the wine. So the white and rosé wines resulted with a fine and elegant smell in the taste.
It was already known that the red wines produced with the traditional Black grape variety do well to grow old. With Achada Grande red, it was decided to let it mature in small oak barrels that exalt its characteristics.
THE COOPERATIVE OF TRANSFORMATION OF AGRICULTURAL PRODUCTS OF BIG FIN
On April 22, 2007, 20 producers and producers from Corvo, Achada Grande and Relva met to form a cooperative that is currently in the process of being registered. Despite the drought, these producers brought 14,235 kg of grape which became approximately 9,800 liters.
With the results and rains this year it is likely that for 2008 will increase the number of members and the number of grapes.
